1. Gamble (obviously) gambling for all shapes and sizes exist in Las Vegas. High stakes, low stakes, lots of different games. Penny slots - thousand+ slot. Poker, blackjack, roulette, and probably a thousand different games.
2. Shows, most of the casinos have various shows (blue man group, Cirque, magic, singing, comedy). There are lots if pay ones, but some of them have some short free shows, e.g. The fountains at the Bellagio, The volcano at the Mirage, The Sirens of Treasure Island.

3. Outside of vegas (just a few miles) there is red rocks canyon, which is a drive through area.

4. Hoover Dam (About 30 mi) outside of vegas. They have a museum, and a tour of the dam available, plus a movie on the building of the dam

5. NY NY has a roller coaster, the stratosphere has a roller coaster and a ride at the top of the building, plus a great view of Vegas (although I don't recommend staying there, kind of dumpy last time I was there for a visit.
6. Take a helicopter tour of the grand canyon:

7. Shopping of all kinds, Caesars, Bellagio, Venetian all have unbelievably expensive shops, great for the lookie loo (as my dad would say).
8. Food of all kinds. I'm not big on buffets, but the breakfast buffet at the Bellagio is particularly good. as is the lunch buffet at Paris. But outside of these adventures in gluttony there are a number of very good places to eat, check here for a decent search:

I have done all of these, except the helicopter tour. Just never got around to it, and now that I have a family it is difficult to get away to vegas.
