The possibilities of cooking a pork loin are endless. You can slice it up, then either bread it and fry, bake it (breaded or unbreaded), through it on the grill. You can dice it up into stripes and saute it with stir fry. You can bake it in the oven, like a roast or even roast it on the grill. Add in some vegetables, a pat of butter and some water to keep it moist.

You can make pork loin with rosemary. A great recipe from Emeril

Something else unique for a pork loin is this: Slice it down the middle, longways. Take a meat clever and beat it down flat, fill the inside with herbs, cheeses and/or stuffings. Roll it up like a jelly roll, tie it up and bake it. I seen Emeril do this on tv and it was so neat! It's called stuffed pork loin, most people use just a tenderloin to do this but if you have a pork loin, it should include it and be separate. It's the leaner bit of meat. You can use the other to make this, but you might want to trim of some of the excess fat.

I like to roast pork loin until it's falling-apart tender and shred it up for sandwiches. Sometimes I add some barbecue sauce to the shredded meat--yummy! That's one of our family favorites.
