What can replace milk in a recipe for people who are lactose intolerant?

Can I substitute soy milk or coconut milk in a recipe that calls for whole milk without ruining the finished product? What's the best way to make a variety of foods for people who can't digest dairy?

Separate topics with commas, or by pressing return. Use the delete or backspace key to edit or remove existing topics.

You can leave an optional "tip" with Mahalo's virtual currency, Mahalo Dollars. If you are asking a difficult question that might require some research, or if you'd like a wide variety of feedback, a higher tip often leads to more answers to your question.

There are so many substitutes for milk, mmng23. I am lactose intolerant myself and have no problem cooking and baking!

You can use any other type of milk to replace milk in a recipe for people who are lactose intolerant. Try soy milk, almond milk, rice milk, or coconut milk. Remember though that rice milk is thinner (more watery), soy milk is thicker, and coconut milk may give a coconutty flavor to what you’re cooking. This article from About.com discusses these milks in more detail: http://dairyfreecooking.about.com/od/dairyfreebasics/tp/MilkSubstitutes.htm.

You may not even notice a change in the finished product. Most people don’t. The trickier dairy products are buttermilk or cream. There is also a forum where many people have discussed the cream-substitute issue: http://chowhound.chow.com/topics/524379. Some of their ideas I haven’t tried yet but I think I will!

Here’s a list of dairy ingredients that may interact with someone who has an allergy or is lactose intolerant: http://www.webmd.com/allergies/guide/milk-allergy. Once you have your substitutions on hand you’ll find that cooking for someone who is lactose intolerant isn’t difficult at all!
