Some people simply put salt and pepper on it. I like to melt butter and put pepper, some garlic, slight touch of sage and oregano. Then I brush it on the turkey. My mother used to make a paste with softened butter and dry mustard mixed together. The turkey skin was nicely crisped and the butter gave it a light tang.
