Try peanut butter, nuts (unsalted to keep it healthier), granola, whole grain breads, whole grain pasta, and cheese! And don't forget to wash that down with whole milk and 100% real fruit juice.
So for your new high-cal, healthy diet I'd recommend the following:
Trail mixes made of nuts and granola, granola cereal, peanut butter sandwiches, cheese sandwiches, grilled cheese, cheese and crackers, pasta primavera (w/ cheese sprinkled on top!), and stirfry with sunflower seeds and peanut sauces.
