Dim Sum is usually associated with Cantonese culture; in Cantonese, the word for Pu-erh is Bo Nay. Sometimes you will even see Chrysanthemum tea marketed as "Dim Sum Bo Nay Tea".
I've frequently been served Chrysanthemum Pu-erh, and regular pu-erh, with Dim Sum. I've also been served oolong. You can read about these teas here:

But like I said, it could really be any tea. But some types of tea are more common than others. Pu-erh and Chrysanthemum Pu-erh, both from my experience and from what I have read, have been the most common.
