Security Grid,
RTS/Adventure
Ever see Minority Report? There is a computer with multiple screens and an interface that you work by touching and dragging the image. In this game you would use the visual interface and voice commands to dispatch police to specific areas. In between action segments there would be times where you examine images to find clues to determine motive break the case and be able to jail the bad guys.
Yojimbo
Samurai action
This one is a fairly direct action game, there would be story battles where you fight with a sword but there will also be segments where archery and gambling come into play.
Dune
Action RTS
Lead your troops to battle on the back of a sandworm. The voice activated weapons would be a good use of the tech. While you fight in action sequences you also have to pay attention to the battle field and issue orders to your team.

I would love to see these kinds of games, but I predict the Natal will fall into the exact same trap Eye Toy did. It did not sell well because there were not enough games, developers were reluctant to develop for it because there were not enough units sold.
With the Natal being far more expensive than the Eye Toy, it might even fall into oblivion more quickly. . .
Functionally Natal is a voice enabled Eye Toy. Natal needs a Halo or Fable level killer app at launch to avoid the same fate. I would like it to do well, but I am not holding my breath
