Wow, there are a LOT of Apple products and I'm not sure I have an alternative for all.
In general, I love how Google seems to be getting a range of products based on its open standard Android, to counter many, if not all of Apple's products. Google Android benefits fromall of Google's great inventions, including Google Maps (including 3d, streetview and navigation), Documents, Search, News, and all those other neat programs google develops for free.
Apple can't counter those!
Here are some of the alternatives I selected:
Apple iPhone: The Google Nexus One, Google's very own smartphone, in direct competition with the iPhone.

Apple iPad: The Google iPad. Not yet released, but will do anything the iPad does, and more. alternatively, there is the Wepad, a German tablet pc.
Apple iPod: Well, basically any MP# player is a great alternative, and I even thoubt anyone will need a separate MP3 player within a year or two anyway, as every mobile phone, can play back mp3 nowadays.
That leaves the Apple Mac. Well, any Microsoft Windows 7 machine will suffice, beating the Apple Mac in price, extensibility and availability of games and software. There is much more high quality software available for Windows 7 than there is for the Apple Mac, so any Windows 7 machine is a great alternative for the Apple Mac indeed.
Did I leave out any Apple product? I think I at least covered the main ones here.
