What are three great desserts that work with a low-carb diet?
I have been on and off diets all my life. A while back I was on the Atkin's diet and that was a little intense. I did learn a lot about health and nutrition while on the diet, and would like to know of some great desserts that I can either buy or make that are low in carbohydrates. Are there any cakes that have very little sugar? What about pies or ice cream? Are there mixes I can buy at a store that are specifically for low-carb diets? What sort of ingredients should I buy to make a low-carb dessert from scratch? Any suggestions you want to give from personal experience?

I know that Low Carb works best for me health wise, I just need to do a better job sticking to it.
When I concentrate on a low carb way of eating, I use these as desert type items:
1. Mini Cheesecakes: Mix 1 pack cream cheese, 1/4 cup Splenda, an egg, and a touch of vanilla . Beat until smooth and then pour in a mini muffin pan and bake at 350 degrees until browned. In my oven it takes about 15 minutes. I tried to google the recipe to get other variations as I know there were some when I first found it years ago but I could not find them today. If I want more flavor to it, I top mine with a touch of sugar free jelly but they are great plain. A similar recipe is discussed here:

2. Sugar Free jello topped with Sugar free cool whip is the easiest dessert I found.
3. Low Carb No Bake Cookies

Quoting the ingredients:
1 tablespoon butter
3 tablespoons heavy cream
2 teaspoons cocoa
Liquid Splenda equal to 2/3 cup sugar
1 tablespoon natural peanut butter
2 tablespoons oats
1/4 cup unsweetened coconut *
1/4 cup almond flour, 1 ounce
1/4 teaspoon vanilla

I've never found liquid splenda so I always use the granulated but you have to be sure it gets dissolved. I double the coconut and omit the flour. I also use regular peanut butter even though it has more carbs because I dont care for the natural. So my version is not as healthy or low carb as the original. When you view the site you will see their version is 1 gm net carb
I tried a few of the Atkins baking mixes and just thought they were to expensive for what you got so I just adapt and cook on my own.
