Confectioner's sugar, also called powdered sugar, is, as the name indicates, a very fine sugar that looks and feels like a powder. It is most commonly used to make icing and frosting for desserts. It can also be added when making whipped cream to stiffen and slightly sweeten the whipped cream mixture, or it can be dusted over pastries and other desserts as both a sweetener and as decoration. Powdered sugar is just regular sugar that has been ground down to a very fine powder and contains about 3% corn starch to keep it soft. There are varying degrees of fineness to powdered sugar.
