What are the staple foods for Greek cooking?

Yes, you can substitute plain yogurt for sour cream. I love to cook Greek food. The staples are feta cheese, butter, filo dough, oregano and lots of olive oil.

My favorite food to make is spinach pie, which instead of using butter to brush on the filo dough, I use olive oil.

Greek food is fatting but it is so good. It is all about moderation, cook a full pan and only eat a small amount and freeze the rest for future meals.
