What are the premium tea brands for Japanese Sencha (a type of Japanese Green Tea) ?

I have a box of Japanese Sencha.
It says "Uji Grade Sencha".

How does the grading system work ?
Is Uji the province that produces the best Sencha ?

Uji refers to a small city on the outskirts of Kyoto and probally refers to the Uji Yabukita which is a green tea produced by steaming and then rolling the leaves. It could also refer to the Ujitawara Ashi, which is the traditional tea used in the tea ceremony. There are several major brands (listed with their provinces of production) of the Sencha including Okinawa Saemidori (Okinawa) Tanegashima Kuritawase (Kagoshima), Makurazaki Saemidori (Kagoshima), Chiran Yutakamidori (Kagoshima), Ei Asatsuyu (Kagoshima), Ariake Yutakamidori (Kagoshima), Uji Yabukita (Kyoto), Sayama Yabukita (Saitama), Kakegawa Yamakai (Shizuoka), Fuji Kurasawa (Shizuoka), Fujieda Fujikaori (Shizuoka), Honyama Inaguchi (Shizuoka), Kanaya Kanayamidori (Shizuoka), Shimazuke Yamanami (Miyazaki).

The superior brand of Sencha is the Gyokuro which is a tea made from only new shoots and cultivated under a mesh to avoid direct sunlight. These major brands are the Yame Hoshino Vil. Gyokuro and the
Kyotanabe Gyokuro

The question of which sencha is "best" is Subjective. Sencha produced in different regions can have subtly different flavor and aroma. There are also different types of sencha based on when the tea is harvested. The harvest is called the "flush" and the first flush is usually the most desirable, although this is also a matter of taste. Some people prefer first flush sencha, and there is also a kind of sencha called Kabusecha, which is shaded, similarly to how Gyokuro is produced. Here is a bit of information on different tea-producing regions in Japan, with listings of different teas produced in each region:

Personally? My experience is that expensive teas are not necessarily better. For example, bancha is a coarser type of tea that is often much cheaper than sencha and is considered "low grade", but I've had some bancha that I strongly prefer to some sencha. Try different sources for yourself and see what you like best.
