Creole cooking represents the multicultural ambiance of Southern Louisiana during the late 17th century, when the region became home to Italian, German, African, Haitian, French, Spanish, and English settlers. Each of these cultures came to New Orleans with their native cuisines and as they mixed in with the Native Americans of the region, a new cuisine that had bits and pieces of each culture’s culinary roots was born.
Creole cooking is very rich, flavorful and can often be spicy. Similar to French cuisine, many Creole dishes use liberal amounts of butter, crème, eggs, and flour. The heavy use of spices came from the influences of the African and Italian cuisines. Some of the most popular Creole dishes are Jambalaya, Gumbo, Red Beans and Rice, and Shrimp Creole.
