M$No mess while it cooks and very simple :)
1/2 cup arborio rice or other short grain rice
1 liter of milk ( full cream is best! )
2 heaped tablespoons white sugar
1 tablespoon butter or margarine ( butter is best )
ground nutmeg ( fresh or powder )
1/2 cup water
Preheat over to 180C
Get a flat baking dish and spread out the rice and add the water. Place in the oven till all the water has been absorbed and then add milk, sugar and stir. Cook for about 30 mins then take out and add more milk if needed and the butter, stir and then sprinkle with nutmeg.
Cook for another 10-15mins or until golden brown on top.
** You can add dried fruit to make a medley - sultanas and currents are really nice, so is ginger :)
