What are the easy to prepare vegan dishes to serve for dinner?

An old friend of mine called me up recently. She is a close friend and a classmate in high school and she told me that she decided to become a vegetarian when we were in college until now. I would like to know if there are easy to prepare vegan dishes appropriate for dinner that won't take a long time to prepare. I know some recipes but those are with meat and vegetables on it. Can you recommend one or two easy-to-prepare vegan dishes?

Here are two of my family's favorites.:

Chili Reno:
1/2 -3/4C evaporated milk
2-3 Tbls. flour
1 sm. can whole green chilis (I like mild)
4 eggs
11 bag grated cheese( Cheddar or Colby jack)

Mix it all up, put it in a 8x8 casserole and cook at 350 for 40-50 minutes.

I usually double this depending on how many I am cooking for. Serve with Salsa and a fresh green salad. You can make your own fresh tasting salsa with a mix from Walmart and fresh tomatoes and a red onion for a summery taste.

Lentil Loaf

lightly boil 2/3 C lentils 2 cups water. You can do this the night before to save time and just refrigerate.

Stir in the following ingredients:
11/4 C quick or rolled oats
1/2 C chopped pecans(or walnuts or leave out)
3 Tbls soy sauce
2 tsp basil

Spray a casserole dish and put it all in. You can cook in the slow cooker if you want for 4-5 hours fast or slow, or throw it in the oven, covered, at 350 for an hour. Serve with a gravy or ketchup and a salad.
