What are the best vegetables to plant in the fall?

It depends where you live.
In my zone 6 garden I can plant cabbage family plants - which includes collards - in the fall. Also, lettuce, spinach, green onions, and radishes. Any plant which hasn't died is likely growing roots even though you may not see top growth.
The above usually also applies to zones 5, 4, and 3.
Parsley stays green in my garden all winter so if there is no snow cover I can harvest a bit. Some herbs such as sage and some mints may also be lightly harvested during the winter.
If you live in a warmer climate (zone 7 or warmer) you may be able to grow more during the winter.
