What do you have to add to a sweet bread to keep it from falling?

Since you are saying sweet bread, instead of sweetbread (animal organs), I am assuming that you are really talking about making bread. There are many different recipes for making bread. There are yeast breads, and the yeast are fungi that produce carbon dioxide from sugars in the bread to make it rise (bubbles in the bread). Cakes, pancakes and muffins are made with baking soda, which is a form of sodium carbonate - which makes carbon dioxide bubbles in the bread as it is being baked and it doesn't use any of the sugar that is present in the bread as do the yeast. A table spoon or so of baking soda is all that is necessary for a loaf of a sweet bread to cause it to rise.

You refer to some kind of bread that is unknown to me. I grew up on a farm and "sweat bread" is the thymus gland (or also the pancreas) of calves, sheep, goats, etc. I like mine fried in butter, but there are many ways to prepare them. Now you have given me a hankering for some sweetbreads. I don't know where one would find fresh sweetbreads now days. Sorry I did not answer your question, but I did want to pass that along.
Have you tried adding an egg (or an extra egg) to the mix?
