"A gluten free diet significantly helps those diagnosed with Coeliac disease. Individuals with Coeliac disease are sensitive to gluten due to gluten damaging the lining of the small intestines. The damage affects the absorption of food and causes weight loss, diarrhea, and iron deficiencies."

Besides benefiting certain diseases, you may find yourself eating more fresh foods. Fruit is always gluten-free. Likewise things like cheese and meat. Of course, you can go to great lengths to reproduce bakery items you think you can't do without. Chances are, though, those things should be more in terms of treats and not staples--I mean, cinnamon rolls are not meant to be eaten with every meal or even every day! So even if you aren't suffering from Crohn's or celiac problems, or autism, you'll be eating less junk so you'll be healthier. Many natural foods stores sell gluten-free baked goods for those times you want a treat. Whole Foods Gluten-free Bakery items are very tasty and have good textures, to boot.
