When I took General Science as my major, the project that I made was to take pictures and to classify them. It was for me very useful because I really did walk around the city just to find each listed palm species. Doing that made me able to know that there are many species belonging to the palmae family - not just the coconut trees and the usual palmera plants that we often see in lawns of most homes.
I would say that all botany projects and experiments are useful. For example, the sprouting of mung beans. I eat sprouted mung beans and it's one of my favorite dishes.

There really are more botany projects that have been also used in agriculture and biology that you can try making yourself. And any project that involve plants fall into botany.
