There is nothing more beautiful on the Island of Kauai than the Na Pali Coast.

I would cover this breathtaking coastline three different ways. Yes, all three.
1) Find a Zodiac boat tour and see the coast by water.

2) Book a flight on a helicopter and see these cliffs from the air.

3) Get a hiking map and find a good hiking trail and spend a day getting lost along the trails and take rest stops under some beautiful private waterfalls!

I highly recommend doing all three. It's impossible to get tired of looking at this beautiful scenery, and makes for the perfect honeymoon.
As far as hotels, well I know that the Hanalei Bay Resort is one of the hottest spots on the Island right now. (North side)

I have stayed at the Sheraton Kauai Resort on the South side of the Island from the Na Pali Coast. It's a pleasant short trip around the Island and I was able to see much more of the local flavor.

Walking on the beach, early in the morning or late at night, when the sun is coming up or going down, either time is very fun. On any beach it is a fun and romantic thing to do.

M$The photos on the website don't get even close to doing justice to the view from that balcony, especially the sunsets. You can even see the tip of the Na Pali coast. The hidden beach is definitely worth the short but steep hike away for the unusual chance at swimming with some privacy. Also within walking distance is a cove that was swarming with sea turtles when we visited.
Hanalei is hands down the most adorable town I've ever seen. It also has a lovely public beach. But even better than that is the Hanalei River. We rented kayaks from these guys: http://www.kayakkauai.com/riverrent.html. Their website is a bit of a mess, but the people there are extremely friendly and knowledgeable. Make sure you paddle both upstream and downstream into the bay (we stopped for shaved ice in between.)
Speaking of shaved ice, it's everywhere on Kauai. I can't pick just one shaved ice stand to recommend; instead, just eat shaved ice, eat lots of it, and make sure you order it with condensed milk! The other culinary treasure that I have to point out is the Coconut Cup Juice Bar, home of the best smoothie I have ever tasted. Ever. My family found it completely by accident on our last day on the island, which also happened to be its first day in business! It's at 4-1586 Kuhio Hwy.
One thing I don't recommend is a luau. The one we went to, which we had heard was the best and most "authentic" there, had a terrible Vegas-meets-Disney stage show that really broke the magic of the island.
If you're into snorkeling, you can rent equipment for the week from any of a zillion surf shops. I think we got ours in Hanalei. My favorite snorkeling beach is definitely Poipu, on the south side of the island.
While on the island you'll often hear people say, "If you don't like the weather on Kauai, wait five minutes." This is completely true. Bring raincoats and umbrellas with you everywhere, since you could wind up in the middle of a fantastic five minute downpour at any time.

M$Rent a Jeep for sure.... also, do the Kalalau Trail which is one of the most amazing things you can do on the island. Also, a helicopter tour of Kauai is stunning.... we did one with the doors off--not for the faint of heart!
10 days is plenty of time for the island--in fact, I might suggest four days in Kauai and four days in Hana, Maui or the Four Seasons Maui.
