I would either suggest a fruit salad or as don5601 said a great brown rice. I've submitted two recipes below:

Waldorf fruit salad:
* 1/2 cup chopped, slightly toasted walnuts
* 1/2 cup celery, thinly sliced
* 1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)
* 1 sweet apple, cored and chopped
* 3 Tbsp mayonnaise
* 1 Tbsp fresh lemon juice
* Salt
* Pepper
* Lettuce
In a medium sized bowl, whisk together the mayonnaise (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce. It goes great on sandwiches too!

Brown Rice Pilaf
* 2 tablespoons olive oil
* 1 large sweet onion, chopped
* 1 cup brown rice
* 2 1/2 cups seasoned chicken broth
* 1 teaspoon salt
* 1/4 teaspoon pepper
* dash cinnamon
Heat olive oil in a large skillet over medium heat. Sauté onion in butter until tender and it begins to turn golden in color. Add rice and sauté, stirring, until onions begin to brown. Add chicken broth and bring to a boil. Stir in salt, pepper, and cinnamon. Transfer to a covered baking dish or leave in the skillet if it is ovenproof. Cover and bake at 350° for 1 hour, until rice is tender.

Both are great all year around, but especially during the summer.

Enjoy!

You could try cauliflour cheese, using a low fat cheese sauce. Personally when I make it, I put broccoli in it as well, and it goes lovely as a side dish to a main meal.
