There are some great recipes for a vegetarian Thanksgiving for your family. Let us address the primary dish first. Allrecipes.com has a good “Tofu Turkey I” recipe.
Ingredients that you will need:
1/2 cup sesame oil
1/4 cup tamari
2 tablespoons miso paste
5 tablespoons orange juice
1 teaspoon honey mustard
1/2 teaspoon orange zest
3 sprigs fresh rosemary 5 (16 ounce) packages extra firm tofu
2 tablespoons sesame oil
1 red onion, finely diced
1 1/3 cups diced celery
1 cup chopped mushrooms
2 cloves garlic, minced
1/8 cup dried sage
2 teaspoons dried thyme
salt and pepper to taste
1 1/2 teaspoons dried rosemary
1/4 cup tamari
3 cups prepared herb stuffing
Steps to follow:
1. Tofu Turkey: Take a clean dish cloth and put the crumbled tofu in it and place in a colander. Place something heavy on top and refrigerate for 2 to 3 hours.
2. Stuffing: Sauté onion, celery and mushrooms in 2 tablespoons of the sesame oil in a large frying pan. Add the garlic, sage, thyme, salt and pepper, rosemary and 1/4 cup of the tamari. Stir well and cook for about 5 minutes. Next, add the prepared herb stuffing and mix everything together thoroughly. Remove from heat.
3. Oven: Preheat the oven to 400 degrees F (200 degrees C).
4. Grease a cookie sheet.
5. Mixing: Combine 1/2 cup sesame oil, 1/4 cup tamari, miso, orange juice, mustard and orange zest in a small bowl and mix thoroughly.
6. Preparing the Tofu: Take the tofu from the fridge. Hollow out the tofu and place that extra tofu aside. Use miso seasoning to coat the edges of the tofu. Now, put the stuffing into the center of the tofu shell.
7. Leftover Tofu: Place the extra tofu on top of the stuffing and press down hard. Turn the stuffed tofu and put it on the cookie sheet. Take the leftover tofu side of the "turkey" (the flat side) down. The sides of the tofu turkey should be gently pressed for an ovular shape and brush the tofu turkey with 1/2 of the oil-tamari mixture. Sprigs of rosemary should go on top of the tofu. Cover it with foil.
8. Baking: Bake for one hour and take out to baste the tofu turkey with the remaining tamari-oil sauce (save 4 tablespoons of sauce). Put it back in the oven for another hour and until golden brown.
9. Tofu Turkey: Put the tofu turkey on a serving platter and use the remaining tamari-oil mixture to brush it and serve hot.
