What are some of the best recipes for leftover chicken?

am talking about chicken breast, not breaded or fried chicken. I am thinking recipes along the lines of pot pie, chicken ala king or a great soup. I am tired of just heating up chicken breasts and eating it plain. I need some variety and something not that difficult to prepare. Thank you!

This is a simple recipe and a great way to use leftover chicken.

Chicken Delight

1 cup cooked cubed chicken
3/4 cup grated cheddar cheese
1 cup mixed vegetables, drained (8 1/2 ounce can)
3 cups corn flakes, crushed
1 10-ounce can refrigerated bisuits

Combine chicken, vegetables, cheese. Separate biscuit dough into 10 biscuits. Place each biscuit on crushed corn flakes and roll each into a 6 inch circle, coating both sides of biscuits. Spoon about 1/2 cup chicken mixture into center of 5 biscuits; cover with remaining 5 biscuits. Press edges to seal with fork. Place on ungreased cookie cheek. Bake at 400 degrees for 15 to 20 minutes or until golden brown.

Well i have my own homemade meal for leftover chicken. If you know how to make tuna cassorole dish instead of tuna use chicken. Only use 2 cans of cream of chicken in it. Frozen veggies in it mixed it all up. Then put in some parsley to add flavor. Mix all of this with the egg noodles that is cooked and drain juice. After it all mix , spread in a oblong pan. Last sprinkle some can Italian flavor bread crumbs over on top not alot just enough to lightly cover. Then put in oven at 350 for 30 mins or til it lightly brown.
Eat and enjoy makes a great meal.

If you have a rotisserie chicken, you can carve the meat off. Then stick the carcass in a pot. Fill the pot with a can of chicken stock and a can of crushed tomatoes. Add spices such as rosemary, parsley, oregano, basil, and even allspice. Add chopped vegetables like celery, carrots, potatoes, onions, and garlic. Cook it for about two hours. Carefully, remove the carcass. If you see any bones, also remove them from the pot. Chop or tear apart the remaining meat and add it to the soup. Take some of the broth, put it in a separate pot, and cook some rice in it until the rice is tender. Add the rice to the soup. Now you have a complete soup.

If you have a new chicken, you can use that instead. Just leave the meat on when you cook the carcass in the soup. Cook for 5 hours instead of 2. After removing the carcass, carve the chicken, then add the meat to the soup.

I usually make chicken enchaladas. I slice onion and sweet peppers, red and green, and lightly fry, then add shredded chicken breast, season, add season. I sometimes add thinly sliced mushrooms, if have them) Just heat it all together, then put this mix in the tortillas, and put your own enchilada sauce on top, then cheese, then put in oven for 20 mins, 180c. Having the leftover chicken breast that is already cooked, makes it a lot faster to prepare!
