What are some healthy ways to bake apples?

Some one recently gave me a few bushels of fresh picked apples from their apple trees. I know the nutritional value of these apples. There are a variety of cooking, baking, and eating apples in here. Each variety is in a different basket but there is almost a full bushel of the baking apples. Do you have any ideas on what to bake to use up some of these apples soon?

I love to eat apples and they are even better in recipes than eating raw. I am also a fan of the Food Network so I found a great, healthy recipe on there for baked apples. Prep time is only 15 minutes and cook time is 1 hour. Enjoy!

Ingredients:

6 large Rome, Cortland, or Gala apples
Juice and finely grated zest of 1 lemon
3 tablespoons unsalted butter, softened
3 packed tablespoons dark brown sugar
1/4 cup dried currants
1/4 cup toasted walnut pieces
6 3-inch whole cinnamon sticks
1/2 cup apple cider
1/2 cup dark rum, cider, or water

Directions:

Preheat the oven to 400 degrees F. Slice off about 1/4-inch of the top of each apple. Scoop out the seeds and core of the apple. Peel off about a 1/2-inch band of the apple's skin along the upper half of the apple with a vegetable peeler. Brush the peeled part and the interior of the apple with lemon juice. Combine the butter, lemon zest, and sugar in a mixing bowl. Add the currants and nuts. Then place some of the butter mixture and a cinnamon stick in each of the apples. Place the apples in an ovenproof baking dish large enough to hold the apples upright. Pour in the cider and rum, bake until the apple is tender, about 30 minutes. Baste the apples with the cider/rum mixture with a bulb baster, 2 or 3 times, during baking.

Serve warm or at room temperature with low fat whipped cream or low fat or no sugar added vanilla ice cream (healthy version)

Hi @amybrowne! I found one healthy recipe that you can try with your apples. This recipe is called Healthy Apple Crumble with Oatmeal.

You are going to need :
4 pieces of apples
1 tbsp. cinnamon
1/2 applesauce (unsweetened)
4 tbsp. splenda brown sugar blend
1/4 cup splenda
1 cup oats
1 tbsp. whole wheat flour.

To prepare:
1. Core and slice apples finely.
2. Next, sprinkle some cinnamon, splenda, flour, brown sugar splenda and 2 tbsp. of applesauce on the apples and mix them thoroughly.
3. Get a separate bowl and mix on it the oats, cinnamon, applesauce and brown sugar splenda
4. Put the oat mixture over the apple slices
5. The oven should be heated at 350 deg. F. Bake it for about 40 minutes
6. When done, you can serve this with vanilla frozen yogurt or light whipped cream. Enjoy!

Here is a simple, healthy recipe for apples. It doesn't even require baking! The following recipe is for 2 servings but can easily be doubled.

Spiced Apples

2 apples, sliced
1 cinnamon stick
3 or 4 slice of lemon or lime
3 to 4 cups Canberry or Raspberry juice -OR 3 to 4 cups raspberry or cranberry flavored diet beverage, such as Crystal Light or Diet Snapple

Combine all ingredients in a saucepan. Cover, and bring to a boil. Reduce heat, and simmer for about 10 minutes, or until apples are tender. Serve hot or cold.

This is a healthy baked apple recipe you might love to try .

*Baked apples with cherries and almonds

Ingredients

7 apples
1/3 cup dried cherries, chopped coarsely
1 tablespoon brown sugar, firmly packed
1/2 teaspoon cinnamon, ground
1/8 teaspoon nutmeg, ground
3 tablespoons almonds, chopped
1 tablespoon wheat germ
1/2 cup apple juice
2 tablespoons dark honey
2 teaspoons canola oil
1/4 cup water

Directions

*First, Preheat the oven to 350 F.

*Get a small bowl and place the cherries, wheat germ, almonds, brown sugar, nutmeg and cinnamon, mix thoroughly until all the ingredients are well incorporated. Set the bowl aside.

* Peel the outer skin of the apples in a circular motion with a sharp knife (optional) and make a cavity at the center.
*Now, Divide the cherry mixture into seven places and press into each apple cavity

*Arrange the apples in an upright position in a deep baking dish and Pour the water and apple juice into the dish. Drizzle the oil and honey over the apples, and cover the dish with aluminum foil.

*Bake in the oven for about 55 to 60 minutes or until the apples are soft when you pierce a knife through it.

*Serve the apples warm and drizzle with the juice from the baking dish.
