What are some great meat suggestions for Easter Meal?

Think outside the box for me, it does not have to be traditional Easter meat.
Tip for best answer: M$0.25

You can leave an optional "tip" with Mahalo's virtual currency, Mahalo Dollars. If you are asking a difficult question that might require some research, or if you'd like a wide variety of feedback, a higher tip often leads to more answers to your question.

I would like to suggest a roasted duck. I know my grandmother said that the only time she ever made a duck was one Easter Sunday. It's something different, or at least around my area. No one ever cooks duck around here.

Codyman4 has a duck how to here at Mahalo

I did see someone on the net make the comment that duck is more of a dark meat. That for people who don't enjoy eating dark meat turkey or chicken, they probably won't like duck. I seen another comment that it taste kind of like filet mignon. I can't say, since I've not eat it, but I have the desire to try it.

Something else that would be different, would be some poached salmon.

Here are some salmon links here at Mahalo:

For that many people, to be cost efficient I'd bake a turkey or do some baked chicken and rice. You could also do a spiral ham or a pork or beef roast. For that many people I'd actually do a ham and one other meat because some people will not like one or the other. Some people will be watching their weight and some people will not eat pork. So you might do one red meat and one white meat.

You can also buy a boston butt, they are cheap... boil or bake it. Flake it off and have BBQ. You could do chicken and pork BBQ, my family really likes that with baked beans and mashed potatoes. If that doesn't sound good, let me know and I'll try to come up with something else.

Thanks for your suggestions, but I do not like duck it is too greasy tasting for me and I did not like the flavor. I forgot to mention that I will be hosting my family for Easter and there could be from 20 to 30 people, so need something that is not too pricey. Thanks again.
