What are some good summer desserts?

I love summer and I love getting new dessert recipes. My best recipes have come from family and friends. Does anyone want to share their favorite summer dessert? I would like to hear of a summer dessert recipe that you have actually tried and your that your family loves! I am not picky, any new dessert recipe that is delicious will be great. Something the family can look forward to on a hot summer night!

A nice friend gave me a few packets of Serendipity 3 Frrrozen Hot Chocolate Mix. I finally tired one last night, and I swear that this stuff is what dreams are made of! I kid you not!

Last night my mind started thinking up outrageous ways of making this even better (like that's even possible!) You could add a teaspoon or two of peanut butter to the mix. You could top with whip cream and some fresh strawberries. You could add some Kalua, Bailey's and vodka for a killer mudslide. This is the perfect summer dessert!

Blueberry Lemon Cheesecake
CRUST
2 cups of graham cracker crumbs
6 TBSPS butter (melted)
9X13 oblong glass dish
Mix the graham crackers with butter, spread in the bottom of the glass dish. Set aside, away from heat. Turn oven to Bake 350.

FILLING
16 oz cream cheese (2- 8 oz bars warmed to room temp)
1 cup granulated sugar
3 eggs
1 cup sour cream
2 TBSPS lemon juice (bottled is okay)
Beat the eggs and then fold in all other ingredients, then continue beating on med-high until well mixed. Pour filling over graham cracker crust and bake for about 1 hour in preheated oven. You can cover it with foil to keep the top from burning or getting too dark.

Allow to cool down then refrigerate for about 4 hours.
TOPPING
1 can blueberry pie filling
or 1 cup fresh blue berries

Here is a yummy summer dessert that is great for the upcoming July 4th holiday.

Flag Cake

Ingredients:

1 Pint sized container of Blueberries
2 Quart sized containers of Strawberries
1 Large sized container of Cool Whip brand topping
Butter Style Yellow Cake Mix

Directions:

Prepare blueberries by washing in a strainer and removing any undesirables and stems.

Prepare Strawberries by washing, hulling, and cutting them in half.

Cook Butter Style Yellow Cake Mix as directed using a rectangular bake pan.

After your cake has cooled remove it from pan and place on a serving platter or I leave mine in the pan.

Cover the entire cake and sides if you remove from pan whipped topping.

Carefully arrange your blueberries in the top left hand corner using as many blueberries as you possibly can fit there.

Carefully arrange strawberry halves in lines starting at the top of your cake, extending out from the blueberry square. Make sure all of you strawberries are lined up evenly, and facing in the same direction, tops facing the blueberries.

Continue to make lines of strawberries down the cake.

I think the absolute best dessert for the summer season would have to be something very cool and refreshing! Ice cream is a snack but not long after you still crave something. I would have to actually go with Strawberry shortcake myself! It is very light but very delicious! It is also very easy and also very cheap to make! All you need is angel food cake, frozen strawberries, whip cream, and a big bowl! You simply layer the ingredients evenly, and you are good to go!
This particular treat is extremely great, and doesn't just have to be eaten during the summer months, but it sure beats all of that heavy fattening snack food items that we all love and ejoy! I hope this helps in some way!
