You definitely need a King Cake! It is probably one of the (if not the) signature Mardi Gras dishes. It is a pastry with a small plastic baby inside. You can find the recipe here:
http://allrecipes.com/Recipe/Mardi-Gras-King-Cake/Detail.aspx

Other suggestions:

Seafood Gumbo: For real southern style gumbo, use blue crab meat and, serve with Tabasco sauce for those who like it hot!

You can find a recipe here: http://www.cooksrecipes.com/soup/seafood_gumbo_recipe_2.html

Lots of of other Gumbo options here:

If you make Gumbo, consider making some red beans and rice to go with it:

As for drinks, how about some hurricane cocktails? It's a traditional New Orleans fave. You can watch a video that shows how to make them here:

or just read the recipe here: http://www.idrink.com/v.html?id=3371

Have fun!

For a traditional Mardi Gras celebration, riders on horseback traveled from house to house, singing, chanting and begging for food to throw in the pot to make a gumbo. So without a doubt, make a gumbo!

If you're feeling creative, try making a homemade king cake. If you can make a normal loaf of bread, you can do this.

It's typically the last day many people eat meat, as some give it up for Lent, so definitely include lots of meat on Mardi Gras day!
