What are some easy recipes that include fresh spinach?

We planted spinach in our garden this year, and it's almost ready to start picking. However, I find myself wondering what I'm going to do with it? I'm looking for simple ideas to use raw or cooked spinach that my family will like. Any examples?

You don't even need recipes - just add it to things you already make, to give yourself an extra punch of nutrients.

Add spinach to your favorite sandwich!

For your kids, you can put a bit of it into your homemade mac'n'cheese.

Spinach is also great in salads, of course.

Spinach is a wonderfully versatile ingredient. Baby spinach even more so, as it's less bitter than full-grown spinach leaves. :)

Ah-ha, little ones. You could always do a "Green Eggs and Ham" day where everything's green! :) The mac'n'cheese is great, but I would definitely be sparse with the spinach. I overloaded one time thinking the cheese would overpower any other flavor, and it didn't. It was very healthy for me, but a bit too bitter. Baby spinach might be a different story, though, who knows. You'll have to experiment!

I'm a little hesitant about cooking the spinach alone since I have some finicky eaters in my house. I didn't even think of throwing spinach on sandwiches since we have two kinds of lettuce as well. I am definitely going to have to try that mac and cheese recipe, I am a mac and cheese fanatic.

Here is a recipe our family loves! It really works well because we have a few vegetarians in our family so for them, I leave the chicken out of this recipe. The recipe is from "You the Owner's Manual" by Michael F. Roizen, M.D. and Mehmet C. Oz, M.D. (the ever famous Dr. Oz!).

Warm Spinach Salad with Chicken, Apples, and Toasted Almonds

2 Tablespoons sliced almonds
1 cup plus 3 Tablespoons apple juice, preferably unfiltered, divided
6 ounces (about 1 1/2 cups) shredded or chopped, cooked skinless chicken breast
1/2 teaspoon canola or olive oil
1/6 cup sliced shallots or chopped sweet onion
1/2 tablespoon brown sugar
1/8 teaspoon cinnamon
1/8 teaspoon salt
3 cups torn spinach leaves
1/2 apple, preferably Fuji or Gala, unpeeled and cut into 1/2- inch cubes

Place almonds on a baking sheet and bake in a 350 degree oven until lightly browned and fragrant, 6 to 8 minutes; set aside.
In a very large bowl, combine 3 tablespoons apple juice and the chicken; toss well and set aside.
Heat a large skillet over medium heat. Add oil, then shallots; saute 5 minutes. Add remaining 1 cup apple juice, brown sugar, cinnamon, and salt. Simmer 5 minutes, stirring occasionally. Add spinach, apple, and almonds to chicken mixture. Add hot shallot mixture; toss well and transfer to 2 serving plates. Serve with freshly ground black pepper if desired.

There's two recipes I like, both are cooked spinach.

Spinach pie

Spinach artichoke dip
Spinach artichoke dip
fresh spinach
2 boxes cream cheese
2 jars artichokes, drained and roughly chopped
1 cup parmesan, shredded
1/2 cup mozzarella
1/2 cup mayo
1-2 cups leftover garlic scape pesto

Chop and boil the spinach for about 5 minutes, drain and squeeze out water.
Microwave cream cheese for a minute or two until it's mixable.
Toss everything else in, mixing well. Pack it into a big oven-safe dish.
Refrigerate for a day or two, cook at 350 for a half hour until top is lightly browned and dip is rocket-hot.

They are nice because cooked spinach really cooks down, so it looks like a huge bunch while raw, but when cooked it takes up a lot less space. When you're to the point where you're just about giving spinach away, this is a win.

Oh I love spinach artichoke dip. Have you ever tried freezing it? That's the kind of thing I'd love to make a big batch of and then freeze for when I have company.

I'm not a big fan of cooked spinach, but I love it fresh! My wife makes an excellent spinach salad:

* Fresh spinach leaves
* Sliced strawberries
* Feta cheese
* Vinaigrette dressing

As the image shows, some people add avocado and nuts, but we keep it simple. The cheese has a strong flavor that melds well with the acidity of the dressing and sweetness of the strawberries. The spinach brings everything together.
