For the Cookies:
3 cups all-purpose flour, plus extra for kneading
1¼ teaspoons ground nutmeg
1¼ teaspoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
1 egg
¾ cup light brown sugar
½ cup honey
½ cup molasses
For the Glaze:
1 cup confectioner’s sugar
2 Tablespoons water
1 Tablespoon lemon juice
1. Preheat the oven to 350°F. Grease two baking sheets or line them with parchment paper.
2. Sift together the flour, nutmeg, cinnamon, cloves and allspice. Set aside.
3. Beat the egg and sugar together on medium speed until light and fluffy, about 2 minutes. Scrape down the bowl.
4. Beat in the honey and molasses until thoroughly combined.
5. On low speed, stir in the flour mixture until just combined.
6. Turn the dough out from the bowl onto a well-floured surface. Knead the dough, adding more flour as kneaded, until a stiff dough is formed.
7. Wrap the dough in plastic wrap and chill until firm, about 2 hours or overnight.
8. On a well-floured surface, roll out the dough into a 9×12-inch rectangle. Cut the dough into 18 3×2-inch rectangles. Bake for 10-12 minutes.
9. Transfer the cookies to a wire rack and let cool. Whisk together the confectioner’s sugar, water and lemon juice and brush or spread on top of the cookies.
10. Allow the glaze to firm, and then store the cookies in an airtight container at room temperature.
Lebkuchen are traditionally sold in the form of hearts with sayings on them at Kristkindelmarkts (Christmas markets). "Du bist mein süßes herzen" ("You are my sweet heart"), "Ich bin total verrückt nach Dir" ("I am totally crazy for you"), etc. :)

Glühwein (another Christmas treat)

Ingredients:
A 750ml bottle of inexpensive dry red wine
2/3 cup of raw cane sugar or white sugar, or non-artificial sweetener of your choice
Juice and peel of one small lemon
2 cardamon pods
4 cloves
2 bay leaves
2 cinnamon sticks
1. Put everything in a heavy bottomed pan. Stir to melt the sugar. Heat the mixture over low heat, and leave for about an hour - it should never boil, just sort of seethe.
2. Serve in small mugs (straining out the peel and spices), with optional shot of brandy, kirsch or other liqueur.
Notes: Increase the amount proportionately to serve more people. Vary the sweetener to change the taste - honey is interesting, as is dark brown sugar or molasses.

M$My best carrot cake recipe is so moist and full of flavour, you will want to bake my recipe for carrot cake again and again.
My family are not so keen on cooked carrots but this cake is polished off in no time at all. Great for the kids to take in their packed lunch or for picnics.
German Karottenkuchen
225g butter
225g light brown sugar
4 eggs, separated
finely grated rind 1/2 orange
20ml 4tsp lemon juice
175g self raising flour
5ml, 1 level tsp baking powder
50g ground almonds
150g walnut pieces, chopped
350g young carrots, peeled and grated
225g cream cheese
10ml, 2level tsp clear honey
Grease and line a deep 20cm (8 inch) round cake tin.
Cream the butter and sugar together in a bowl until pale and fluffy. Beat in the egg yolks, then stir in the orange rind and 3tsp of the lemon juice.
Sift in the flour and baking powder, then stir in the ground almonds and 125g of the walnuts.
Whisk the egg whites until stiff and then fold into the cake mixture with the carrots. Pour into the prepared cake tin and hollow the centre slightly.
Bake the carrot cake at 180 degrees C for about 1 1/2 hours.
Cover the top of the cake with foil after 1 hour if it starts to brown.
Leave the carrot cake to cool slightly, turn out onto a wire rack, remove the lining paper and leave to cool completely.
To make the topping, beat together the cream cheese, honey and remaining lemon juice and spread over the top of the cake.
Sprinkle with the remaining walnuts.

M$APPETIZER:German Potato Salad
Kartoffelsalat
8-10 salad potatoes
1 onion
1/2 cup of warm meat broth
white wine vinegar, sunflower oil and salt to taste
pepper
Steam the potatoes in their skins until tender. If you have any potatoes from the day before, even better as they are easier to slice. Scrape them and let them cool slightly until just warm.
Chop the onion finely.
Slice the potatoes thinly with a potato slicer or a vegetable knife. Place in a large bowl.
Add the onion and enough warm meat brothso that the potatoes are quite moist but not sitting in broth! and leave to soak for an hour.
Lastly add enough sunflower oil, vinegar, salt and pepper to taste. Again I can`t give exact quantities but I suggest that you start off with a couple of tablespoons of each of the oil and vinegar and then add more to taste.
Mix thoroughly. The potato salad should not be too dry, but quite moist.
Serve with your favourite German recipe such as Wiener Schnitzel.
MAIN COURSE: German Pork Roast
ou will need:
1kg pork shoulder with rind. Wash the meat thoroughly, dry and season with freshly ground salt and pepper. Rub the salt and pepper well into the meat. Score the pork rind with a sharp knife.
Pour water in a roasting tray to a depth of 2cm. Then place the meat, rind down, into the roasting tray. Slice two medium sized onions (with the skin on) into 1/2cm thick rings. Slice 3 garlic cloves and place over the meat. Sprinkle 2 dessert spoons of cararway seeds over the meat.
Place in a preheated oven at 250 degrees C for half an hour. Then turn the meat over, rind facing up and baste.
It is important to loosen the crust away from the meat and do not baste with too much broth at one time. Baste little and often.
Cook for another hour and a half. Near the end of the cooking time brush the crispy rind with cold dark beer or cold water. This will ensure crispy crackling. The sauce must be brown and clear. Never thicken with flour or cornflour. In Bavaria that would be a deadly sin!

DESSERT:German Cheesecake
German Kasekuchen with Mandarin Oranges
Who can resist this German cheesecake recipe. Kasekuchen is a favourite of mine and so refreshing with mandarin oranges. Obviously it is laden with calories but so delicious.
My recipe will make 24 slices.
Cheesecake
2 tins of mandarin oranges (each 314 ml)
10 medium eggs
375g sugar
2 packets vanilla sugar (Dr Oetker)
pinch of salt
small amount of butter
1.5kg low fat quark
250g cream
250g mascarpone
75g ground almonds
2 packets vanilla pudding powder (Dr Oetker)
50g sliced almonds
Drain the mandarin oranges. Beat the eggs in a very large bowl for about 10 minutes until thick and creamy. Sprinkle in the sugar, vanilla sugar and salt and mix. Stir in the quark, cream, mascarpone and 50g ground almonds. Sieve the pudding powder into the mixture and mix well. Lastly stir in carefully 4/5 of the mandarin oranges.
Sprinkle the remaining almonds over the bottom of a well greased baking tin. Pour the mixture into the tin. Decorate the top with the sliced almonds and remaining mandarin oranges and bake at 175 degrees C for 1 hour.
Leave to cool.
