What are animals that can only hunt while moving/chasing their prey called? I know wolves and other dogs are in this category.
I seem to recall watching a documentary on wolves and the narrator mentioned that wolves are "--". Meaning, they can only hunt while chasing their prey. Which proves the old adage; never run from a strange dog.

Wolves, and other fast moving predators like Cheetah are also called coursing predators. You may have heard of certain domestic dog breeds referred to as coursing hounds - these are the hounds that have keen eyesight and fast agile bodies (Greyhound, Saluki).
Predators that rely primarily on the chase differ in general from predators that have tactics like lying in wait (Lions are perhaps a great example of this type of predator) or camouflage (certain fish are great examples of this type of predator).
