what are all of the holy vocations?

If you are talking about the Holy Vocations of the Catholic Church, they are:
Priest
Nun
Abbot (sometimes called Monk)
Deacon
Brother
Lay Minister
Lay Ministry (ministry usually overseas)
Originally, the only Holy Vocations were of the priest, and abbot. Then, nuns and brothers were added. Deacons and brothers came after the Middle Ages.
It was not until a little after Vatican II in which lay ministers and lay ministry were recognized as being vocational callings. There are still many that will not recognize any lay person as having a Hold Vocation.
