What are a few methods of anonymizing your IP address when using OS X?
Looking for something that will let me change IP addresses on the fly, in Safari and/or Firefox, either at browser level or system level.

Instead of using a Proxy try Hotspot Shield. Its the easiest way to do it.

One time when I was having problems with ISP's DSL modem with selective surfing issues. Skype, IM and online gaming works. I used Hotspot Shield to visit any websites without a hitch.

It's pretty tough to change your IP address.... most computers connect to the Internet through a router or other gateway device.
Often, these routers work by using Network Address Translation (NAT). Linksys, D-Link, Netgear, Cisco, Juniper, etc, etc, all use NAT. Here is a rundown of NAT: http://www.howstuffworks.com/nat.htm
So what this means is that even though it is technically possible to change your IP address in OSX, you'll have a much more difficult time changing the IP Address of your gateway device that uses NAT.
A proxy server is really your best bet. There are private, public, anonymous, transparent and a variety of other forms of proxy services. Basically, a proxy will allow all of your web requests to be transferred through it rather then directly to your computer. This means that the website logs (or whatever) will see the IP address of the proxy and not your computer.

You can use the proxy method, which is what the previous poster recommended, or you could try Tor, http://en.wikipedia.org/wiki/Tor_(anonymity_network).
