A little bit of nori chewiness is not a bad thing.
Nori becomes chewy on contact with moisture. I would say that the issue that you had was probably down to your rice. If the rice is too wet then that would do it. If that is the case, decrease the amount of liquid in your rice cooker a little bit.
It might have also happened because you prepared your sushi, then stuck it in the refrigerator. Nori will lose its crispness pretty quickly. I would suggest preparing the sushi as close to the time of eating as possible and leaving it out.
