Good luck on this crazy adventure! I tried to build one during the winter holidays but ended up just making an arcade controller for my PC/Play station 3. Below are some of the best sites that i've found for building your project.
For the actual cabinet, you might want to check these links:

Looking to build my own arcade game system, do you have easy to follow step by step instructions?
I'm in the US, I have an old computer and screen that I'd like to transform to an old stand up MAME arcade game system. Have you done it? where can I buy parts in the US? do you have good step by step instructions I could follow? Thanks!

Nice, this will definitely help me find where to purchase some of the hardware and how to program my PC to boot up the MAME emulator right away.
