I prefer vimeo.com for a lot of reasons:
(1) great community
(2) fair license agreement
(3) excellent HD options
(4) excellent customization
(5) fantastic premium service for $60 a year that lets you limit URLs that can embed, gives you HD embeds, more player customization and so on

What's the best video service to use in order to embed videos to a website? (Not including YouTube)
For the sake of this question, answer a website other than YouTube. I used Revver for a while, but they seem to have basically gone out of business. Preferably pick a site that will be around for a while.

I suggest you check out blip.tv. I heard about them on a net@night podcast, they had one of the higher ups from the company there. I like them because you upload your video once, then choose how many formats you want them to deliver it in - automatically. iPhone, PC, Mac, Flash, etc... They also have a nice revenue share model to put in advertising.
