The Wii version doesn't have the graphics quality the other versions have. I think that's the main reason. Plus, it's harder to connect/play with friends using the Wii compared to the 360.

The Wii remote is a wireless device. The GH peripherals on the Wii use the Wii remotes as their interface. The GH peripherals on the other systems have to build in the wireless connections into the peripherals. This is the added expense that you see for that bit.
If you're talking about the game only... MS has set the price of most games to around $60. The Big N has set the price of most games to $50.
It's arbitrary... it's history... it's what Nintendo/MS set the price at. Gamecube games used to be $30, so $50 didn't seem too much for the consumer, supposedly for a "next gen" game). Microsoft is just greedy (jk).

Why's the Nintendo Wii version of Guitar Hero games always cheaper than the Xbox 360 or PS3...
...version? I have an Xbox 360 and I'm always jealous when I see those Wii prices.

I'm going to assume that you're looking at the game that is packaged with all the peripherals... The Wii remote is a wireless device. With or without the peripherals, Wii games are consistently about $10 cheaper than the Xbox 360/PS3 versions. PS2 is usually about the same price as Wii version.
