GameFAQs often have guides that cover this sort of thing, so that is always a good place to check out. According to an FAQ on there about Rainbow Six Vegas on the Xbox 360, the following voice commands are understood by the game:

Move To
Hold
Regroup
Infiltrate
Assault
Tag
