It's not impossible, but whenever journalists ask Square Enix about it, they complain about how hard it would be.
They would want to get all of the same artists, designers and developers together on the project. The problem is they're all involved in new projects, like Final Fantasy XIII, which will take very long to complete itself.
If they're going to do it at all (and this is just a guess), it's 3+ years out.

As of right now, a remake of FF7 hasn't even been confirmed. I wouldnt be surprised to see a remake somewhere down the line though considering that they've already remade the original FF, FF2, FF3, and FF4. Just don't expect it any time soon.
I don't even think they are going to make one, especially after their PSP game Crisis Core which was really close to the timeline.
