When you complete all the quests, you can continue playing in the game world, to unlock achievements, fight, get the secrets and all that. Some of the areas will not be accessible anymore (like the Spire, for instance).

About the max amount of gold, I was literally swimming in millions of gold and didn't reach a cap. Also, gold really means nothing by the time you get to the end of the game, since you can pretty much by everything quite easily.
