Yoshi Falls
Sherbet Land
Peach Beach
However, on Peach Beach and Yoshi Falls, you can cut through water using a star or a mushroom. Even on Sherbet Land, there are places where you have to choose which path to take (cut the corner short or go out wide for the boost). All the other tracks at least have a spot where you can use a mushroom to cut the corner short through sand or grass.

I have never played it, but I have played every other one. There has never been a shortcut for every level, so I doubt the Wii one would have them. Sorry if I am not much help, but I noticed no one else had answered you. I just wanted to offer my experience and thoughts.

There are 3 tracks on Mario Kart Wii that don't have any shortcuts. They are: Yoshi Falls
Sherbet Land
Peach Beach
However, on Peach Beach and Yoshi Falls, you can cut through water using a star or a mushroom. Even on Sherbet Land, there are places where you have to choose which path to take (cut the corner short or go out wide for the boost). Ya. You did a better job than me. Ha ha. It is true that you can cut corners and go through grass/water with mushrooms/stars.
