The secret trophies can either be gained by just playing and playing the game till you stumble upon them, or you can use an trophy guide like http://www.ps3trophies.org/game/skate-2/guide/

that lists all the trophies including the secret ones.

The ??? trophies are secret trophies. To earn them you have to do the task that you need to like any other trophy except you don't know what it is. I suggest going to www.achieveplaystationtrophies.com to find out what the trophie is and how to get it.
