Here is the nutritional value of your typical serving (100g) of butternut squash:
Carbohydrates 11.69 g
- Sugars 2.20 g
- Dietary fiber 2.0 g
Fat .10 g
Protein 1.0 g
Vitamin A equiv. 532 μg 59%
- β-carotene 4226 μg 39%
Thiamine (Vit. B1) .10 mg 8%

Butternut Squash is simular to that of a pumpkin in both taste and when its ripe it has an orange tint to it.
My favorite recipe would have to be the Butternut Squash Soup. There are several different ways to make this, but my favorite Ive stumbled across online would have to be from allrecipes.com:
INGREDIENTS (Nutrition)
2 tablespoons butter
1 small onion, chopped
1 stalk celery, chopped
1 medium carrot, chopped
2 medium potatoes, cubed
1 medium butternut squash - peeled, seeded, and cubed
1 (32 fluid ounce) container chicken stock
salt and freshly ground black pepper to taste
DIRECTIONS
Melt the butter in a large pot, and cook the onion, celery, carrot, potatoes, and squash 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.
Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper.
My next test with this vegetable would have to be this recipe I stumbled across online for a pie, here's the link incase you want to check it out as well:

Is the Butternut Squash a carbohydrate? What meals you can prepare with this vegetable? What is the Butternut Squash similar to?
I've often wanted to experiment with this vegetable but am concerned it's high in carbohydrates.
What suggestions does anybody have to prepare this, I once had it in a soup but that's about it.
