SIMPLE AND CRISPY GREEN BEANS
Crispy, slightly caramelized ends. Juicy, flavorful centers. These green beans are a world away from the mushy canned variety. They’re unbelievably easy to prepare, and will have even those who think they don’t like green beans begging for seconds.
This is the way my family’s been making them for decades. Some people say cooking halves nutrient content. I say make these and you’ll want to eat twice as many! Recipe calls for frozen beans, I suppose fresh out of your garden works, too :-)
* 12 oz frozen green beans (I use Trader Joe’s French Green Beans)
* 1/4 cup water
* 2 TBSP olive oil
* 1 tsp oregano (can substitute another herb)
* 1/2 tsp garlic powder or 1 clove pressed garlic (optional)
* salt and pepper to taste
Put water, oil, and green beans in a wide chef’s pan or large skillet. Turn heat to high. Sprinkle oregano and garlic onto the green beans. Once water begins to boil, turn the temperature down to medium. Stir occasionally. The water will first cook the green beans, leaving them juicy, then the water will evaporate. If the beans aren’t cooked enough, add a tablespoon or two more water. Once the water cooks off, stir frequently and add salt and pepper. The olive oil will make the beans brown and crispy. Pairs nicely with beef. Serves 2-4
Bonus:
This recipe for southern style green beans might satisfy you. I cannot reveal my wife's family secret recipe (that includes bacon, chili powder and slivered almonds), but suffice to say it is worth the extra hour of prep time to do it right.
So try this one, I hope you enjoy it (although it won't be the best!)
Southern Style Thanksgiving Green Beans
INGREDIENTS
* 2 quarts water
* 4 pounds fresh green beans, trimmed and snapped into 1 1/2 inch pieces
* 1 ham hock
* 1 onion, chopped
* 2 cloves garlic, finely chopped
* 1/4 cup distilled white vinegar
* 1 tablespoon salt
* 1/2 tablespoon black pepper
DIRECTIONS
1. Place the water in a large pot, and mix in the green beans, ham hock, onion, garlic, and vinegar. Season with salt and pepper. Bring to a boil, and cook 10 minutes.
2. Reduce heat to low, and simmer 4 hours. Remove the ham hock, and slice the meat into small pieces. Return meat to the beans, and serve.

'''Costa Rican Picadillo'''
Ingredients
*1 lb of beans, cut into 1/4 slices
*2 medium carrots, quartered lengthwise and cut into 1/4 slices
*1/2 large onion, chopped
*1/2 sweet red pepper, chopped
*2 cloves of garlic, minced
*1/2 tsp salt, but taste before adding at the end
*1 lb of ground beef, low fat
*1-2 tbsp sunflower oil
1 packet of dry dehydrated mushroom soup
*1 1/2 - 2 cups warm water
Directions:
Put the oil in a deep frying pan and saute the onion, sweet pepper and garlic until the onions appear clear. Add the hambuger and cook until done, separate the chunks. Then add the green beans and carrots, allowing about 10 minutes to simmer. Add a little of water if needed, no more than 1/2 cup. Add the pepper.
Add the dehydrated mushroom soup to the water. Mix until it is dissolved and then add to the hamburger and vegetable mix. Allow to simmer for about 5-10 minutes, test for salt and add if needed. The sauce should be thickened and the vegetables tender but not mushy.
You can substitute ground turkey of course if you need to avoid beef.

Do you have a great green bean recipe to share?
I need some advice on how to prepare my green beans fresh from the garden.
BUT, I have some conditions:
I prefer to keep the ingredients list really simple, I do have chopped onion, various seasonings, olive oil, etc. Prefer not to use bacon fat. And I'm hoping the result is for some fairly dry-ish beans (so not mushy or swimming in sauce or oil) that just have a nice light coating of seasoning. Do you have some recipes like that?
I'd love to hear your feedback on why you like this recipe so much.

Try the grill. Put your green beans and onions on some aluminum foil, use a light coat of olive oil and then season them with what ever you like. Wrap them up and cook for about 30 minutes, flip them over occasionally and enjoy. There great.

I know that you wanted a dryish dish to make, but this is what I have, I believe you will like it if you try it. You can add less water/dry mushroom to make it less saucy of course. This is a dish I love and learned to make. I am happy to share it with you.
