Are Vegetable grown in Northern Greenhouses safe to eat?

Someone has told me that in low light conditions of Northern Greenhouses the food has a build up of something unhealthy, or builds up something normally safe to unhealthy levels. Is this true? So, can hydroponically grown greens and tomatoes in Northern States be safe?

All in the eyes of the beholder so to speak! Someone somewhere will contest ANY food claim. How safe is ANY food?
