It is of utmost importance that you follow a recipe when you are making Almond Biscotti!
You must exactly pre-heat the oven as to instructions of the recipe and then turn it down as per instructions of the recipe. If you don't, the Almond Biscotti either burn to a crisp or they are not done properly which might leave them soggy.
Baking sheets are commercially available in any supermarket. Some people use a teflon covered variety with are easy to clean and can be used various times.
Baking sheets are placed on top of a baking tray and the Almond Biscotti are placed on top of the baking sheet, not in them. The baking sheet only serves to save the Almond Biscotti from sticking to the baking tray and the baking tray, the baking sheet and the Almond Biscotti stay in the oven until the Biscotti are ready.
