We vacationed on Kauai for eight days and enjoyed the local attractions so much.
Our favorite beach was at Lydgate State Park. While our resort had a picturesque beach and an amazing pool, we discovered a special section of beach at Lydgate State Park that was safe for young children and was popular with local residents. Our daughter was 16-months old at the time and absolutely loved the calm water of this protected alcove.
In terms of our favorite spot for scenery, it was the Kalalau Valley. Waimea Canyon and the Na Pali Coast are incredibly beautiful. We liked it so much, we wrote a blog on it --

I'm partial to the south shore, near Kalaheo.

Hanalei Bay area (say "hi" to Puff) on the north side of the island. There's some great places (and a nice Heiau) to explore over there.
My answer from a previous Kauai question:
If you go to to Hanalei beach (say hi to Puff the Magic Dragon), Hanalei Cave is pretty cool.
If you continue to travel to the end of the road, beyond Kee beach, you
can walk around to a nice Heiau (sacred site) there (Ka Ulu O Laka
Heiau).

I lived on Kaui for a summer volunteering to do environmental work with Kokee State Park. Having gotten to know the park fairly well and te island moderately well, my fave place is the Nualolo trail with breathtaking views over the ocean and dramatic valleys. Because access to these vistas is only from hiking the trail, you are guaranteed serenity and virtually no one else there
