There are many companies that offer these types of tours.
I would first decide what type of safari you would like.
There are:
Sand surfing
Overnight
Camel riding
Buggy rides... etc.

I have been through the Middle East, but not Dubai.
Once you figure out what type of day or overnight trip you want, I would then contact the hotel you plan to stay at and see which company they recommend.

frankly by seeing the answers anyone will get confused
i have tried Arabian tours
right now they are the best safari guys
if you wanna go try to stay there in the dessert for a day
(not in summer )
you will really enjoy it

Arabain Adventures is owned by Emirates.com and is considered the best and the biggest company. I used Travel & Culture Myself.
