I think if your letterbox surroundings are grey, then I'm thinking that your brightness and or your backlight is turned up to high. I have played with plenty of HDTV settings and never seen any options for turning the bars different colors, but I have seen people turn up backlights and brightness to the max and turn all of their "blacks" significantly greyer. You might not notice in the regular picture, but the bars are clumping together enough of the black that its noticeable.
Turn down your brightness and or backlight a few clicks and let us know what happened.

I might also try one of those DVD refernce tuners, they're a DVD movie that is just for helping you tune the color and settings on the TV.
