It's mainly the lighting. Since soap operas need to be flimed more quickly than regular TV shows, the lighting is placed higher in the studio and not adjusted as much as they would for a prime time show. Also, if you notice, a lot of outdoor courtyard scenes are actually filmed in a giant studio and not truly outdoors therefor the light would definitely seem not as natural. They also have a tight per-episode budget so the amount of editing they can do is extremely limited.

What's different about the filming of soap operas?
Something that always strikes me, but I am unable to put my finger on, is that soap operas (especially Spanish) look very different than normal TV/film. The images of the characters seem to stand out from the background. What is going on, and how do they achieve that effect?
