We use to make the following homemade cookies at home and our children enjoyed eating with their friends. I would like to share the same with you.
Chocolate chips cookies
--------------------------------
(easy to make dark chocolate chip cookies . Plan them in advance and keep away the batter for later use)
Ingredients
--------------
220 gms demerara (brown) sugar
180 g castor sugar.
200 g salted butter, softened
2 eggs
1 teaspoon (5 ml) vanilla essence
15 ml water
5 g salt
3g baking soda
310 g flour, sieved
450 g chocolate chips or dark bitter chocolate bars cut into tiny bits

Preparation
---------------
In a bowl, combine demerara sugar, castor sugar and butter till light and creamy. Gradually add eggs, one at a time, along with vanilla essence and water. Sieve all the dry ingredients and fold them in till just combined. Gently fold in the chocolate chips. Chill slightly in a refrigerator. Then roll into cylinders and freeze until ready to use. Slice into one centi metre thick roundels. Place five cm apart on a lined cookie tray. Bake at 175*c till light golden. Allow to cool before serving. Serve with one scoop of vanilla , chocolate or ice cream of your choice sandwiched between the smooth sides of two chocolate chip cookies. Freeze until ready to serve.
